Zucchini Cheese and Pea Sprout Pots

100g (3.5 oz) full cream feta cheese
1 tomato – de-seeded and diced
2 tablespoons fresh basil – chopped
Salt and pepper – to taste
Zucchini – shaved ribbons (see images below)
Fresh pea sprouts
Using a small bowl, mix the diced tomato, chopped basil and feta cheese together.
Add salt and cracked pepper to taste.
Lay each zucchini ribbon out flat on a board.
Place a small bundle of pea sprouts at one end.
To level the pots, (so that they stand upright on your serving platter), cut off the excess shoots at the base.
Place 1 teaspoon cheese mixture over the top of the pea sprouts.
Gently roll up the ingredients in the zucchini ribbon.
