Rich Sauce Apple Pie

Ingredients:
(Serves 4 - 6)
Sauce:
1 cup evaporated or fresh cream
¾ cup caster sugar
Apple pie:
¾ cup caster sugar
2 eggs
1 cup plain flour
1½ teaspoons baking powder
2 tablespoons butter
1 big tin (can) pie apples
Method:
Sauce:
Mix the sauce ingredients together until all the sugar has dissolved.
Place in the fridge while the pie is baking.
Apple pie:
Preheat the oven to 180°C (356°F)
Using a medium-sized bowl, mix the sugar and eggs together.
Sift the flour and baking powder together. Mix the flour in with the egg mixture.
Melt the butter using hot water. Stir the liquid butter into the flour/egg mixture. Mix well, then pour the mixture into a pre-greased oven-proof dish.
Pack the apple pieces tightly together in the batter until there is no more space left. Bake the pie for 40-45 minutes, or until golden brown on top. Test to see if a test pin comes out clean before removing from the oven.
Once baked (and still hot) slowly pour the prepared sauce over the pie. The pie will soak up the sauce, leaving it deliciously moist.

Serve warm or cold with a side of whipped cream.
