Peanut Delight Cookies

Ingredients:

(Makes 30)

  • 4.4oz (125g) butter

  • ¾ cup brown sugar

  • ¼ cup caster sugar

  • 1 egg

  • 1 teaspoon vanilla extract

  • 1¾ cup self-rising flour – sifted

  • 1 cup Reese’s peanut butter chips

  • ½ cup crushed raw peanuts

Method:

Preheat the oven to 320°F. (160°C)

Line a tray with baking paper.


Melt the butter in a medium-sized saucepan.

Set aside to cool.


Add the brown sugar and caster sugar to a medium-sized bowl.

Pour the melted butter over the sugar.

Mix until the sugar and butter become a smooth paste.


Lightly whisk the egg and vanilla extract together, then add to the sugar and butter mixture.

Gradually add to the butter mixture until fully combined.

Add the peanut butter chips and the crushed raw peanuts, then mix through.


Place teaspoon-sized amounts of the dough mixture onto the prepared tray.

Flatten each ball into a disc shape.


Bake for 12 minutes, or until the cookies are cooked through.

Transfer to a wire rack and allow to cool.


Serve with tea or coffee
