Hot Lava Wing Challenge

(Serves 4-6)

  • 4.4 lbs. (2kg) chicken wings

Dry Rub:

  • 1½ cups corn flour

  • 2½ teaspoons cayenne pepper

  • 2 teaspoons sweet paprika

  • ½ teaspoon allspice

  • 2 teaspoons onion powder

  • 1½ teaspoons garlic powder

  • 2 teaspoons dry chili flakes

  • Salt and pepper to taste

Hot Lava Sauce:

  • 1 cup sriracha sauce

  • ½ cup rice wine vinegar

  • ¼ cup apple cider vinegar

  • ½ cup compact brown sugar

  • 3 teaspoons cayenne pepper

  • 1 teaspoon fine black pepper

  • Sea salt to taste


Preheat the oven to 356°F (180°C)

Line two baking trays with baking paper and set aside.

In a medium/large bowl, mix all the dry rub ingredients together.

Evenly coat the chicken wings with the spice blend.

Place the wings on the lined trays.

Bake for 10-15 minutes, or until golden brown.

Stir all the chili (Hot Lava) sauce ingredients together until smooth and glossy.

Remove the wings from the oven and bast them in the chili sauce.

Turn and repeat on all sides.

Return the wings to the oven and bake for a further 5-8 minutes.

Serve hot - with a cold glass of milk!
