by Nadine Lloyd
Ingredients: (Serves 6)
-
1kg (2.2lb.) lean beef mince
-
1 small onion – finely chopped
-
1½ teaspoons ground coriander
-
½ teaspoon ground cloves
-
1 teaspoon paprika
-
1 tablespoon Worcestershire sauce
-
Salt and cracked pepper to taste
Filling:
-
½ a small onion – finely chopped
-
½ cup capsicum – finely chopped
-
1 cup mushrooms – finely diced
-
3 bacon rashers – finely chopped
-
1 big clove of garlic – crushed
-
1 cup melting cheese – grated
Method:
Preheat the oven to 180°C (356°F).
Mix all the meat and spice ingredients together.
Filling:
Mix all the filling ingredients together - except for the cheese.
Using an ovenproof dish, evenly flatten half the minced mixture out to the edges of the dish.
Evenly spread the filling mixture out over the meat layer, leaving a 5cm (2in.) unfilled edge around the side of the dish.
Sprinkle the cheese on top of the mushroom mixture.
Top off the dish with the remaining minced mixture.
Press down around the edges to seal the filling in.
Bake for 25 minutes, or until cooked through.
The mince will shrink away from the dish's edge.
Serve hot with oven chips, vegies, or a fresh garden salad.
