Cheddar Cheese and Black Pepper Straws

Ingredients:

(Makes 60)

  • 3½ cups plain Flour

  • ½ teaspoon salt

  • 7.9oz (225g) butter – sliced into small pieces

  • 1½ cups cheddar cheese – grated

  • 2-3 teaspoons cracked black pepper

  • 2 egg yolks

  • 1 cup extra cheddar cheese – grated

Method:

Preheat the oven to 320°F (160°C).

Line two baking trays with baking paper and set aside.


Add the flour, salt, and butter to a large mixing bowl.

Mix through (using your fingers) to create a dough.

Add the cheese, pepper, and egg yolks.

Knead into a smooth dough.


Roll half a tablespoon sized amount of dough into long straws.

Place the straws onto the prepared trays.

Sprinkle the top with extra cheese.

Bake for 25 minutes, or until golden brown.

Remove and cool on wire racks.


For best results, allow the straws to dry overnight.

Serve with a frosty cold beer.
